  • 1/4 cup coconut oil, solid

For the strawberry filling:

  • 16 oz fresh strawberries, sliced
  • 1/4 cup water
  • 1 tbsp balsamic vinegar, (can do more or less to taste)
  • 1 tbsp Bob’s Red Mill coconut sugar, (optional for a sweeter filling)

  • To begin, gently place your coconut butter jar in a bowl of hot water to allow it to soften to a pourable consistency. Simultaneously, start preparing your delicious strawberry filling.
  • In a saucepan, combine the sliced fresh strawberries, water, and coconut sugar (if you are choosing to add it for extra sweetness). Place the saucepan over medium-low heat and let the strawberries gently simmer, stirring occasionally, until they begin to break down and release their juices, forming a saucy consistency.
  • While the strawberries are simmering, prepare the crumble/crust mixture. In a large mixing bowl, combine all the crumble/crust ingredients, excluding the softened coconut butter and solid coconut oil. Use a fork to lightly blend these dry ingredients together. Next, add the softened coconut butter and solid coconut oil. Continue using the fork to mix the ingredients until small, distinct crumbles form. It’s important not to overmix at this stage; we want to preserve the crumbly texture.
  • Preheat your oven to 350° F (175° C). Line a square baking pan with parchment paper, allowing some overhang on the sides for easy removal later. Take approximately two-thirds of the prepared crumble/crust mixture and press it firmly and evenly into the bottom of the lined pan to form the base layer.
  • Return to your simmering strawberries. By now, they should be well broken down and have a lovely saucy consistency. Remove the saucepan from the heat and stir in the balsamic vinegar. This will brighten and deepen the strawberry flavor without making it taste vinegary.

Then, generously sprinkle the remaining one-third of the crumble mixture on top of the strawberries.
