  • 2 lbs (907.18 g) ground beef
  • 2 eggs
  • 1 jar (16 oz) salsa, divided
  • 2 tbsp ghee, or other cooking oil

FOR THE SEASONING:

  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp salt sea salt
  • 1/2 tsp pepper
  • 1/4 tsp cayenne pepper

Instructions

  1. Preheat oven to 400° Fahrenheit (200°C) and grease a loaf pan with ghee or oil. For easier cleanup, you can also line the pan with parchment paper.
  2. Prepare the seasoning by combining all seasoning ingredients (chili powder, garlic powder, paprika, cumin, onion powder, oregano, salt, pepper, and cayenne pepper) in a small bowl and mixing them thoroughly.
  3. In a large mixing bowl, place the ground beef. Add half of the salsa, both eggs, and the prepared seasoning mix. Using your hands, gently mix the ingredients until they are evenly incorporated. Be careful not to overmix, as this can make the meatloaf tough.
  4. Transfer the beef mixture into the prepared loaf pan, shaping it into an even loaf. Pour the remaining salsa over the top of the meatloaf. You might have a little extra salsa, depending on the size of your jar, which you can save for serving.
