Mastering the Dairy-Free Cream Sauce for Tuscan Chicken

The secret to a truly decadent Tuscan chicken, without any dairy, lies in the perfect cream sauce. We’ve perfected a method that delivers incredible richness and flavor, and it’s simpler than you might think.

Why Full-Fat Coconut Milk is Your Best Friend

Our go-to ingredient for achieving that luxurious creaminess is full-fat coconut milk. It provides a naturally rich base that emulsifies beautifully into a smooth sauce. After extensive testing, we consistently recommend the Aroy-D brand available on Amazon. Why Aroy-D? It’s pure, full-fat coconut milk that rarely separates and doesn’t become watery, which is often an issue with other brands. Many alternative coconut milks contain added water or thickeners, which can negatively impact the texture and consistency of your sauce. For optimal results, always opt for 100% full-fat coconut milk.

Did you know you can also make fresh coconut milk at home? It’s surprisingly easy! Check out our simple 2-ingredient coconut milk recipe for a homemade alternative.

Coconut Cream vs. Coconut Milk: What’s the Difference for Your Sauce?

While often used interchangeably in some contexts, coconut cream is essentially a thicker, more concentrated version of coconut milk. It’s the rich, fatty part that rises to the top when coconut milk is refrigerated. You can successfully use either coconut cream or full-fat coconut milk in this recipe. Using coconut cream will simply result in a slightly thicker, even more indulgent sauce.

Sometimes, canned coconut milk might separate into a thicker cream layer and a more watery liquid. If you encounter this, don’t worry! Simply pour the entire contents into a blender and process until it’s a smooth, uniform “milk-like” consistency before adding it to your sauce. This ensures a perfectly blended, lump-free result.

A common concern is whether the Tuscan chicken will taste distinctly like coconut. Rest assured, it won’t! The robust flavors of garlic, shallot, aromatic herbs like basil and Italian seasoning, and the savory tang of sun-dried tomatoes expertly mask any subtle coconut flavor. What you’re left with is a rich, creamy, and deeply satisfying dairy-free sauce that truly shines.

Ingredients

  • 1 shallot, diced
  • 4 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tsp sea salt
  • 1 tsp pepper
  • 4 chicken thighs, (or chicken breasts, see step #2 for preparation)
  • 2 tbsp ghee, (can substitute avocado oil if strictly dairy-free is needed)
  • 1/4 cup chicken broth, (refer to notes for consistency tips)
  • 2 tbsp arrowroot starch, (refer to notes for alternatives)
  • 1.5 cups full-fat coconut milk
  • 1/2 cup sun-dried tomatoes, (chopped)
  • 1/4 cup fresh basil, (chopped)
  • 3 cups fresh spinach
  • Chopped parsley, (optional topping for garnish)

Instructions

  1. Dice your shallot and mince the garlic. In a small bowl, combine the Italian seasoning, sea salt, and pepper, mixing well. This will be your chicken seasoning.
  2. **If using chicken breasts:** Place each chicken breast between two sheets of parchment paper. Using a meat mallet or rolling pin, pound them down to an even thickness (about ¾ inch). This ensures even cooking. **(Skip this step if using chicken thighs).**
  3. Heat a large skillet (cast iron or stainless steel works best) over medium-high heat. Add the ghee. Once hot and shimmering, sprinkle both sides of the chicken pieces generously with your prepared Italian seasoning mix.
  4. Carefully add the seasoned chicken to the hot pan. Avoid overcrowding; you may need to cook the chicken in two batches depending on your skillet size. Cook without disturbing for 4-5 minutes, allowing a beautiful golden-brown crust to form. Flip the chicken and cook for another 4-5 minutes on the second side, until it’s mostly cooked through.
  5. While the chicken is searing, whisk together the chicken broth and arrowroot starch in a small bowl until completely smooth. This slurry will thicken your sauce without lumps.
  6. Once the chicken is mostly cooked, remove it from the skillet and set it aside on a plate. It will finish cooking in the sauce.
  7. If needed, add another tablespoon of ghee to the pan. Add the minced garlic and diced shallot. Cook, stirring constantly to prevent burning, for 1-2 minutes until fragrant and softened. Make sure to scrape up any browned bits (fond) from the bottom of the pan; these add immense flavor to your sauce.
  8. Pour in the full-fat coconut milk, add the chopped sun-dried tomatoes, and fresh basil to the pan. Give your chicken broth and starch mixture another quick whisk and then gradually pour it into the simmering sauce, stirring constantly to incorporate.
  9. Stir the sauce well, continuing to scrape up any remaining browned bits from the pan. Allow the sauce to come to a gentle simmer and thicken slightly.
  10. Return the partially cooked chicken pieces to the skillet, nestling them into the rich sauce. Reduce the heat to low, cover the skillet, and simmer for about 3-4 minutes, or until the chicken is fully cooked through (internal temperature reaches 165°F / 74°C).
  11. When the chicken is done, add the fresh spinach to the skillet. You may need to add it in batches if your pan is full. Stir the spinach into the warm sauce until it wilts down completely, which usually takes 2-3 minutes.
  12. Serve your creamy Tuscan chicken immediately with your favorite accompaniments such as roasted vegetables, mashed potatoes, fluffy rice, or low-carb cauliflower rice. Spoon plenty of the delicious sauce over everything. Garnish with fresh chopped parsley if desired.

Recipe Notes & Expert Tips

  • **Chicken Cuts:** While chicken thighs are fantastic for their juiciness, you can absolutely use chicken breasts. Follow step 2 to flatten them evenly, and adjust cooking times as needed to ensure they are fully cooked but not dry.
  • **Sauce Consistency:** If you find your sauce is too thick for your preference, gradually add a splash more chicken broth until you achieve your desired creamy consistency.
  • **Starch Alternatives:** If you don’t have arrowroot starch on hand, tapioca starch is an excellent substitute and will yield similar results. Cornstarch can also be used, but note that it is typically not considered Paleo or Whole30 compliant.
  • **Flavor Boost:** For an extra layer of flavor, consider adding sliced mushrooms or bell peppers to the pan along with the shallots and garlic. Sauté them until softened before adding the liquids.
  • **Spice Level:** If you enjoy a touch of heat, a pinch of red pepper flakes added with the garlic and shallots will give your Tuscan chicken a subtle kick.
  • **Storage & Reheating:** Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm on the stovetop over low heat, adding a little extra broth or coconut milk if the sauce has thickened too much.
