  • 2 lbs chicken thighs
  • 1 tbsp avocado oil
  • 10 pieces bacon, diced
  • 3 cups cauliflower rice
  • 4 cups broccoli florets
  • 2 cups mushrooms, diced
  • 1/4 cup arrowroot flour
  • 2 tbsp minced garlic
  • 1.5 cups coconut milk (full-fat canned recommended)
  • Salt and pepper, about 1 tsp each
  • 1 tbsp butter, ghee or coconut oil (for greasing)

Instructions

  1. Preheat oven to broil.
  2. Grease a sheet pan with avocado oil and place chicken thighs on the pan. Season lightly with salt and pepper on both sides. Place the chicken in the preheated oven to broil for 6 minutes. Remove the pan, flip the chicken pieces, and return to the oven to cook for another 6 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  3. Once the chicken is fully cooked, remove it from the oven and set it aside to cool slightly. While the chicken cools, reduce the oven temperature to 400° Fahrenheit (200°C).
  4. Prepare all your remaining ingredients as noted: dice the bacon, ensure your cauliflower is riced, chop broccoli into bite-sized florets, dice the mushrooms, and mince the garlic.
  5. Heat a large, oven-safe skillet (or a Dutch oven) over medium heat. Add the diced bacon and cook, stirring occasionally, until it just starts to get crispy, usually about 6-7 minutes.
