  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1.5 lbs chicken thighs
  • 1 tbsp Italian seasoning
  • 6 pieces bacon, diced

For the creamy sauce:

  • 1/2 onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh sage, diced, (can sub dried)
  • 1 cup full-fat coconut milk
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

  • Large Skillet (oven-safe preferred)

Instructions

  1. Preheat oven to 400° Fahrenheit (200°C) and line 2 medium sheet pans with parchment paper.
