  • 1.5 lbs flank or skirt steak, cut into thin strips
  • 1/4 cup avocado oil
  • 4 cloves garlic, minced
  • 1 tbsp garam masala
  • 2 tsp smoked paprika

For the rest of the bowls:

  • 4 cups spinach, (or other greens of choice)
  • 2 cups cauliflower rice, (or sub white rice if not Whole30)
  • 1 tbsp avocado oil
  • Sea salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/4 red onion, thinly sliced
  • Tzatziki sauce, (the sauce from our Greek Meatballs recipe)

  • Begin by preparing the beef. Slice the flank or skirt steak into thin strips. In a shallow dish, combine the sliced beef with avocado oil, minced garlic, garam masala, smoked paprika, sea salt, and pepper. Mix well to ensure the beef is fully coated. Cover the dish and refrigerate for at least 15 minutes to allow the flavors to meld. This marination step is crucial for tender, flavorful results.
  • While the beef is marinating, prepare the remaining ingredients for your bowls. Wash and chop the spinach (or other greens), halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion. If making homemade tzatziki, prepare it now using the recipe from our Greek Meatballs. Having all your components ready will make assembly quick and easy.
