Ingredients

For the muffins:

  • 1.5 cups cassava flour, (whisked before measuring – we’ve had the best luck with either Bob’s Red Mill or Otto’s Naturals)
  • 2 tsp paleo baking powder
  • 1/2 tsp sea salt
  • 1/2 cup coconut butter, softened, (plus more for optional drizzle on top)
  • 1/4 cup coconut oil, room temperature
  • 1/2 cup coconut milk
  • 1/3 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tbsp apple cider vinegar
  • 1 cup freeze dried blueberries, rehydrated by soaking in water while you make the batter and then drained , (optional, or fresh blueberries if in season)

For the crumble topping:

  • 1/2 cup cassava flour, (whisked before measuring)
  • 1/4 cup coconut sugar
  • 1/4 cup pecans, chopped, (optional, omit for nut-free)
  • 3 tbsp coconut oil, melted
  • 2 tsp cinnamon
  • 1/4 tsp sea salt

Equipment

  • Muffin Tin

Instructions

  • Preheat oven to 375° Fahrenheit, and line a muffin pan with parchment liners.
  • In a large mixing bowl, combine cassava flour, baking powder and sea salt from the muffin ingredients with a fork.
  • Using the fork, “cut” softened coconut butter and room temperature coconut oil into the dry ingredients until small bits form, resembling coarse crumbs.
  • Add coconut milk, maple syrup, applesauce and apple cider vinegar and mix with the fork until just combined. Gently fold in rehydrated or fresh blueberries if using.
  • Divide the muffin batter evenly among the prepared muffin pan cups, filling each approximately 2/3 of the way full. Gently spread the tops with your hands to create an even layer.
  • Prepare the crumble topping by combining all the topping ingredients in the bowl you just used for the muffin batter. Mix with a fork until moist clumps form; be careful not to overmix, as you want a distinct crumbly texture.
  • Generously sprinkle the crumble topping over each muffin. Transfer the muffin pan to the preheated oven and bake for approximately 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and let cool slightly in the pan before transferring to a wire rack to cool completely.
  • Serve and enjoy your freshly baked coffee cake muffins. For an extra touch of deliciousness, you can drizzle some additional softened coconut butter on top. We find these muffins are absolutely divine when served a little warm. If enjoying them later, simply remove from the parchment liner and reheat for about 10 seconds in the microwave for a warm, comforting treat.
