  • 1.5 cups heavy cream , (can substitute coconut cream for dairy-free)
  • 3/4 cup sun-dried tomatoes, chopped if needed
  • 1/4 cup fresh basil, roughly chopped, (can substitute 1-2 tbsp dried basil)
  • 3 cups spinach
  • Fresh chopped parsley, (optional topping)
  • Shredded parmesan cheese, (optional topping, omit for dairy-free)
