Ingredient Deep Dive: What Makes This Casserole Shine

Each component of this ground pork casserole plays a crucial role in creating its delectable flavor and satisfying texture. Understanding the purpose of each ingredient can help you appreciate the harmony of the dish and confidently explore substitutions.

  • Ground Pork: The star of our show, ground pork brings a rich, savory depth and satisfying texture to the casserole. It’s a versatile protein that absorbs flavors beautifully. While pork is perfect for this recipe, you can effortlessly substitute it with any other ground protein you prefer, such as lean ground turkey for a lighter option, ground beef for a classic flavor, or even ground chicken. Ensure you break up any protein choice into small pieces for even cooking and distribution.
  • Coconut Aminos: This essential ingredient forms the base of our savory sauce, offering a delightful umami flavor with a hint of sweetness. Coconut aminos are a fantastic soy-free alternative, making this recipe suitable for those with soy sensitivities or following a paleo/Whole30 diet. If you don’t have coconut aminos on hand, you can substitute liquid aminos or even regular soy sauce. However, be mindful that these alternatives are significantly saltier than coconut aminos, so you should reduce the quantity to about 1/4 cup to avoid over-salting the dish.
  • Spiralized Vegetables (Zucchini, Sweet Potato, Regular Potato): These vibrant vegetables aren’t just for nutrition; they create the “noodles” that give this casserole its unique texture and bulk. The zucchini offers a refreshing lightness, while sweet potato adds a touch of natural sweetness and beautiful color. Regular potatoes contribute a comforting starchiness. The combination ensures a diverse flavor and texture profile in every bite. If you wish to experiment, feel free to use other spiralized vegetables in this casserole. For instance, spiralized butternut squash noodles or even carrots could make excellent substitutes for the sweet potato noodles, offering different flavors and nutrient benefits.
  • Apple Cider Vinegar: A touch of apple cider vinegar in the sauce provides a bright, tangy counterpoint to the richness of the pork and savory spices, balancing the overall flavor profile.
  • Ghee / Avocado Oil: Used for greasing the casserole dish and tossing the vegetables, these fats contribute to the overall flavor and ensure even cooking. Avocado oil is a neutral-tasting, high-heat oil, while ghee offers a rich, buttery flavor without dairy.
  • Aromatic Spices (Garlic Powder, Onion Powder, Paprika, Black Pepper, Sea Salt): This carefully selected blend of spices forms the backbone of our irresistible sauce, infusing it with layers of savory, slightly smoky, and warm notes that perfectly complement the pork and vegetables.
  • Fresh Onion (Diced) & Green Onions (Sliced): The diced onion cooks down into the casserole, adding a foundational savory flavor, while the fresh green onions provide a bright, crisp garnish and a pop of color and fresh oniony bite at the end.

Expert Tips for a Flawless Ground Pork Casserole

Achieving casserole perfection is all about the details. These essential tips will help you navigate the cooking process and ensure your ground pork casserole turns out deliciously every time.

  • The Non-Negotiable Zucchini Squeeze: This is arguably the most crucial step for a successful casserole. Do NOT skip squeezing out the excess moisture from the zucchini noodles (as shown in step #2 of the instructions). Zucchini naturally holds a lot of water, and if you don’t remove it, your casserole will turn out watery and soggy instead of beautifully roasted and tender-crisp. Taking a few extra minutes for this step will make all the difference in the texture and overall quality of your dish.
  • Trust the Sauce’s Potency: When you prepare the savory sauce, you might initially think it doesn’t seem like a large quantity. But trust us – a little truly goes a long way with this concentrated blend of flavors. Our goal was to create a sauce that perfectly coats and enhances all the other delicious ingredients in the dish without overpowering them. It’s designed to complement, not dominate, so resist the urge to add more!
  • Embrace the Spiralizer (or Learn Alternatives): For perfect vegetable “noodles” that roast beautifully and mimic traditional pasta, a spiralizer is an invaluable kitchen tool. We personally use and highly recommend the Paderno Spiralizer for its ease of use and consistent results. If you don’t have a spiralizer yet, it’s a worthwhile investment for healthy cooking. Alternatively, you can achieve a similar noodle-like texture using other kitchen tools. Explore the various methods shown in this video, which demonstrate how to create vegetable noodles without a dedicated spiralizer, using tools like a julienne peeler or a mandoline.
  • Stir for Even Roasting: To ensure your vegetables and pork cook evenly and develop a lovely caramelized texture, remember to stir the casserole every 10-15 minutes during the baking process. This prevents some parts from burning while others remain undercooked.
  • Crisping Up the Top: If you love a slightly crispy top on your casserole, consider finishing it under the broiler for the last 3-5 minutes of cooking. Keep a very close eye on it, as broilers can quickly go from perfectly crisp to burnt.
  • Customizing Heat: For those who enjoy a little kick, a pinch of red pepper flakes added to the sauce or a dash of hot sauce after baking can elevate the flavor profile.
  • Serving Temperature: This casserole is best served immediately after the sauce is mixed in, allowing the flavors to be vibrant and the vegetables to retain their ideal texture.

Ingredients

  • 2 tbsp ghee, (or sub avocado oil)
  • 1 medium zucchini, spiralized
  • 1 sweet potato, spiralized
  • 1 regular potato, spiralized
  • 1 onion, diced
  • 1.5 lbs ground pork
  • Salt and pepper, (optional, to taste)
  • 3 green onions, diced

For the sauce:

  • 1/4 cup coconut aminos
  • 1 tbsp apple cider vinegar
  • 2 tbsp avocado or olive oil
  • 2 tsp garlic powder
  • 1.5 tsp black pepper
  • 3/4 tsp onion powder
  • 3/4 tsp paprika
  • 1/2 tsp sea salt

Instructions

  • Preheat your oven to 400° Fahrenheit (200°C). Generously grease a 9×13-inch casserole dish with ghee or avocado oil to prevent sticking.
  • First, spiralize the zucchini. Once spiralized, gather the zucchini noodles in a clean cheesecloth, a thin kitchen towel, or several layers of paper towels. Firmly squeeze out as much excess moisture as you can. This critical step prevents your casserole from becoming watery. After squeezing, pat the noodles dry with a fresh paper towel and set them aside.
  • Next, spiralize the sweet potato and the regular potato. Dice the onion into small, even pieces. Place the diced onion, the well-drained zucchini, and both types of potato noodles into your prepared casserole dish. If any noodle strands appear excessively long, you can easily cut them into shorter, more manageable pieces using kitchen scissors.
  • Lightly drizzle the vegetable noodles with avocado oil and season them with approximately 1/2 teaspoon each of salt and pepper. Toss gently to ensure all the vegetables are evenly coated.
  • Now, take your ground pork and break it into small, bite-sized pieces using your hands. Evenly distribute and nestle these pieces of pork in among the vegetable noodles in the casserole dish. This ensures the pork cooks thoroughly and flavors the vegetables.
  • Transfer the casserole dish to the preheated oven and roast for a total of 40 to 50 minutes. To promote even cooking and browning, stir the contents of the casserole every 10-15 minutes. Pay close attention during the last 10 minutes of baking to prevent any burning. For an extra crisp top, you can switch the oven to broil during the final 3-5 minutes, but watch it constantly as broilers work quickly.
  • While the vegetables and pork are roasting, prepare your signature sauce. Combine all the sauce ingredients (coconut aminos, apple cider vinegar, avocado/olive oil, garlic powder, black pepper, onion powder, paprika, and sea salt) in a bowl or a jar. Whisk vigorously until all ingredients are thoroughly combined and the sauce is smooth. Also, chop your green onions as noted for garnish.
  • Once the vegetable noodles and pork are perfectly cooked and tender, carefully remove the casserole from the oven. Evenly sprinkle the chopped green onions over the entire dish. Pour the prepared savory sauce over the veggies and pork, then gently toss everything together to ensure all ingredients are well-coated and infused with flavor. Taste and adjust seasoning with additional salt and pepper if desired.
  • Your delicious and healthy ground pork casserole is now ready to serve immediately and enjoy!
