Ingredients

  • 2 sweet potatoes, cut into small cubes
  • 1 tbsp avocado oil
  • 10 pieces bacon, diced
  • 3 cups spinach, roughly chopped (or sub other greens)
  • 4 green onions, diced
  • 3 cups mushrooms, diced
  • 12 eggs
  • 2 tsp sea salt, divided
  • 1 tsp ground pepper

Instructions

  1. Preheat oven to 400° Fahrenheit. Line 1 large or 2 medium baking sheets with parchment paper.
  2. Cut sweet potatoes into small, uniform cubes and spread them evenly on the prepared baking sheet(s). Drizzle with avocado oil and season with about 1 teaspoon of sea salt. Mix thoroughly to coat all the potato pieces and place in the preheated oven. Bake for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
  3. While the sweet potatoes are baking, dice the bacon into small pieces. Place the diced bacon in a large oven-safe skillet (ensure it’s large enough to hold all ingredients later) over medium heat. Cook the bacon until it begins to crisp but is not overly brittle. Remove the cooked bacon and place it on a plate lined with paper towels to drain excess fat. Reserve just enough bacon fat in the bottom of the skillet to lightly coat the pan for later steps.
  4. Chop the spinach, green onions, and mushrooms according to the recipe instructions.
  5. In a large mixing bowl, whisk the eggs until well combined. Add the chopped spinach, green onions, mushrooms, and the cooked bacon. Season with the remaining 1 teaspoon of sea salt and 1 teaspoon of ground pepper. Add the roasted sweet potatoes to the egg mixture in the bowl and mix everything together thoroughly.

  7. Carefully transfer the skillet to the preheated 375°F oven. Bake for an additional 20-25 minutes, or until the eggs are completely cooked through and the frittata is set in the center. Cooking time may vary slightly depending on the size and depth of your skillet, so begin checking for doneness around the 15-minute mark. Remove from the oven, let it cool for a few minutes, then cut into individual pieces and serve warm.
