Ingredients
- 2 lbs boneless skinless chicken thighs
- 1/2 cup arrowroot starch
- 1 tsp sea salt
- 1 tsp ground pepper
- 3 tbsp avocado oil, divided (can use ghee or butter if you’re ok with dairy)
- 1 shallot, diced
- 3 cloves garlic, minced
- 8 oz. mushrooms, sliced (cremini or button)
- 1/2 cup chicken broth
- 1 tbsp balsamic vinegar
- 3/4 cup coconut milk
- juice of 1 lemon
- 2 tbsp freshly chopped herbs (parsley, thyme or oregano)
For serving:
- 3 zucchini, spiralized
- 1 tbsp avocado oil
- salt and pepper
Instructions
- Prep the shallot, garlic, and mushrooms as indicated. Finely chop your chosen fresh herbs. You can also spiralize the zucchini now, or you’ll have ample time to do so later while the chicken is cooking and simmering (during steps 4 & 7).
- Place the arrowroot starch in a shallow bowl or on a plate, then add the sea salt and ground pepper. Whisk these ingredients together until well combined.
- Dredge the chicken thighs in the starch mixture, ensuring they are lightly and evenly coated on all sides. Set the coated chicken aside on a clean plate.
- Heat a large skillet over medium heat and add approximately 2 tablespoons of avocado oil. Once the oil is hot, carefully add the chicken thighs to the pan. Depending on the size of your skillet, you may need to cook the chicken in batches to avoid overcrowding.
- Cook the chicken undisturbed for about 5-6 minutes per side, or until it achieves a beautiful golden-brown sear. Do not allow it to burn. Remove the cooked chicken and place it on a clean plate. If cooking in batches, add more avocado oil as needed between each batch.
- Maintain the skillet at medium heat and add another 1 tablespoon of avocado oil. Add the diced shallot, minced garlic, and sliced mushrooms. Sauté these ingredients until the mushrooms begin to soften, which should take about 2-3 minutes.
- Pour in the chicken broth, coconut milk, balsamic vinegar, and fresh lemon juice. Stir everything together, then reduce the heat to low and allow the sauce to gently simmer.
- Carefully nestle the cooked chicken thighs back into the simmering sauce. Let it continue to simmer for 6-7 minutes, or until the sauce thickens to your desired consistency and the chicken is thoroughly cooked through. If the sauce becomes too thick, gradually add small amounts of extra chicken broth to thin it out.
- While the chicken is simmering, if you haven’t already, spiralize the zucchini into noodle-like strands.
- In a separate large pan, heat one tablespoon of avocado oil over medium heat.
- Once the pan is hot, add the zoodles and generously sprinkle them with salt and pepper. Cook, frequently tossing the zoodles, for 3-4 minutes until they are warmed through but still retain a slight crispness, avoiding a mushy texture.
- Serve the luscious chicken marsala immediately over the perfectly cooked zoodles, and garnish with your fresh chopped herbs for an added burst of flavor and color.
