Ingredients

For the seasoning:

  • 1 tbsp curry powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp sea salt
  • 1 tsp pepper

For the stew:

  • 2 lbs beef stew meat, cubed
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 sprigs fresh thyme, finely diced
  • 1 tbsp avocado oil
  • 2 cups beef broth
  • 1 cup coconut milk
  • 1 tbsp curry powder
  • 2 tsp hot sauce , (optional)
  • 1 tbsp tomato paste
  • 2 tsp fish sauce
  • 6 medium Yukon Gold potatoes, whole
  • Salt and pepper to taste

  • Slow Cooker

Instructions

 

For the Instant Pot:

  • To prepare the seasoning blend, combine all seasoning ingredients in a small bowl. Toss the cubed beef stew meat with this seasoning mixture until each piece is evenly coated, then set aside.
  • Dice the onion and bell pepper, and finely chop the fresh thyme as instructed in the ingredients list.
  • Activate the “Sauté” function on your Instant Pot and add the avocado oil. Once the oil is hot, introduce the seasoned beef, spreading it into a single layer as much as possible. Brown the beef on all sides, stirring occasionally, for approximately 7-8 minutes. Press the “Off/Keep Warm” button to cancel the sauté function.
  • Add all remaining stew ingredients (excluding extra salt and pepper for seasoning later) to the Instant Pot. Stir well to combine everything. Secure the lid on the Instant Pot and ensure the pressure release valve is set to the sealing position. Select the “Soup” or “Manual/Pressure Cook” setting and set the cooking time as specified for your model (typically around 35-40 minutes for beef stew).
  • Once the cooking cycle is complete, carefully perform a quick release of the pressure by turning the valve to the venting position. Be cautious of the steam.
  • When the float valve has dropped and it is safe to open, remove the lid. Use a potato masher or a sturdy spoon to gently break up the cooked potatoes into smaller chunks, allowing them to thicken the stew. Taste the stew and adjust seasoning with additional salt and pepper as needed. Ladle into bowls and serve immediately.

For the Slow Cooker:

  • Follow steps 1 and 2 from the Instant Pot instructions above to prepare your seasoning blend for the beef and chop your vegetables.
  • Heat a large skillet over medium-high heat and add the avocado oil. Once shimmering, add the seasoned cubed beef, ensuring not to overcrowd the pan (work in batches if necessary). Brown the beef on all sides for about 5-6 minutes to develop a rich flavor and crust. Transfer the browned beef directly to your slow cooker.
  • Add all of the remaining stew ingredients (excluding extra salt and pepper for seasoning later) to the slow cooker with the beef. Stir thoroughly to combine all components.
  • Cover the slow cooker and cook on the LOW setting for 8 hours, or on the HIGH setting for 4 hours. For the most tender beef and deepest flavor, we recommend the longer cooking time on low.
  • Once the stew is cooked to perfection, remove the lid. Use a potato masher or a sturdy spoon to break up the softened potatoes into smaller pieces. This will help to naturally thicken the stew and distribute the creamy texture. Taste and season with additional salt and pepper as desired. Spoon the hearty stew into individual bowls and serve.
