  • 2 zucchini, spiralized into noodles
  • 1 tbsp avocado oil
  • 4 cloves garlic, minced
  • 1 tsp red pepper flakes, (adjust to your preferred spice level)
  • 1/2 cup bone broth, (we like Osso Good Bones brand)
  • 1 lb large shrimp, (Fish Fixe is a favorite – save $10 on your first order with code REALSIMPLEGOOD)
  • 1/2 bunch asparagus, ends trimmed and cut into 1-inch pieces
  • 2 precooked sausage links, sliced into rounds, (Teton Waters Ranch brand recommended)
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 cups fresh arugula
  • 2 lemons, freshly juiced

Instructions

 

  • First, spiralize your zucchini and set the noodles aside. Then, mince the garlic cloves. 
  • In a large skillet, heat the avocado oil over medium heat. Add the minced garlic and red pepper flakes, cooking and stirring continuously until the garlic is fragrant, about 1-2 minutes. 
  • Pour in the bone broth, then add the asparagus, sliced sausage, and shrimp. Season with salt and pepper. Cover the skillet and cook until the shrimp turns pink and is fully cooked through, typically about 2-3 minutes per side. Stir occasionally to ensure even cooking. 
  • Remove the skillet from the heat. Stir in the spiralized zucchini, fresh arugula, and the juice of the lemons. Toss everything gently to combine all the ingredients and flavors. Serve immediately and enjoy your vibrant, healthy meal!
