Why Choose Pumpkin Pie Bars Over Traditional Pie?
While a classic pumpkin pie holds a special place in our hearts, these pumpkin pie bars offer a wonderful, convenient, and equally delicious alternative, especially for holiday gatherings. Their sturdy, nutty, and slightly salty-sweet crust provides the perfect foundation for a rich, creamy pumpkin pie filling. They embody the essence of fall in every single bite, making them ideal for any autumn celebration, from casual family dinners to grand Thanksgiving feasts. Unlike traditional pies that can be messy to slice and serve, these bars come out of the oven, firm up beautifully as they cool, and are incredibly easy to cut into neat, individual portions. This means less stress for the host and a hassle-free dessert for guests.
Beyond the convenience, the bar format allows for a delightful textural contrast. The dense, flavorful crust provides a satisfying chew, perfectly complementing the smooth, velvety pumpkin filling. This harmonious blend of textures, combined with the classic warm spices of pumpkin pie, creates a truly unforgettable dessert experience. Plus, they travel exceptionally well, making them the perfect dish to bring to a potluck or holiday party. You can prepare them ahead of time, chill them, and simply transport them to your destination without worrying about a delicate crust or a messy filling.

A Healthier Holiday Treat: Paleo, Gluten-Free, and Refined Sugar-Free
One of the most remarkable aspects of these pumpkin pie bars is their commitment to wholesome ingredients without compromising on flavor. They are meticulously crafted to be paleo-friendly, gluten-free, and refined sugar-free, making them an excellent choice for health-conscious individuals or those with specific dietary requirements. We believe that everyone deserves to enjoy delicious holiday desserts, and these bars ensure that no one feels left out.
The crust, made with a blend of wholesome nuts and almond flour, offers a naturally gluten-free base that is rich in healthy fats and fiber. Instead of highly processed ingredients, we opt for natural sweeteners like honey and molasses in the crust, and pure maple syrup in the filling, providing a subtle sweetness that perfectly balances the earthy pumpkin and aromatic spices. This mindful approach to ingredients not only makes these bars healthier but also enhances their natural flavors, allowing the true essence of pumpkin and fall spices to shine through. You can indulge in these festive treats knowing that you’re nourishing your body with quality ingredients.
This recipe proves that “healthy” doesn’t mean “boring” or “flavorless.” In fact, many people find that desserts made with natural ingredients offer a more complex and satisfying taste profile. The natural sweetness from maple syrup and honey, combined with the richness of pumpkin and a carefully selected blend of spices, creates a dessert that is deeply flavorful and comforting, perfect for the autumn and winter months. These bars are a testament to the fact that you can enjoy classic holiday flavors in a way that aligns with a paleo or gluten-free lifestyle, making them a fantastic option for inclusive holiday baking.
Tips for Perfect Pumpkin Pie Bars Every Time
Making these pumpkin pie bars is a straightforward process, but a few key tips can ensure your success and elevate your baking experience. First, when preparing the crust, be mindful of how long you process the nuts. You want a fine, flour-like texture without turning them into nut butter, which can happen quickly if you over-pulse. A good consistency is key for a crumbly yet cohesive crust. Pressing the crust firmly into the parchment-lined baking dish is also crucial; this helps it hold together beautifully once baked and cooled.
For the pumpkin pie filling, ensure all your wet ingredients are thoroughly combined before slowly incorporating the dry ones. This helps prevent lumps and ensures a smooth, creamy texture. The addition of baking soda and apple cider vinegar at the end creates a slight fizz, which contributes to the filling’s light texture. Don’t skip this step!
Patience during the cooling process is perhaps the most important tip. While it’s tempting to dive in as soon as they come out of the oven, allowing the bars to cool completely – and ideally chilling them in the fridge for an hour or two – is essential. This firming process is what makes them so easy to cut into clean, perfect squares. Rushing this step might result in a crumbly mess, so resist the urge and let them set properly. Once chilled, they slice effortlessly, revealing distinct layers of nutty crust and vibrant pumpkin filling.
These bars are incredibly versatile when it comes to serving. As mentioned, coconut cream whipped cream and a sprinkle of cinnamon are a fantastic choice, adding a light, airy contrast to the rich bars. However, don’t hesitate to get creative! A drizzle of warm maple syrup, a dusting of powdered erythritol for a refined sugar-free “powdered sugar” look, or even some toasted chopped pecans on top can add extra flair and flavor. For a more decadent treat, consider pairing them with a scoop of dairy-free vanilla ice cream. The combination of warm spices and cool ice cream is simply divine.

Ingredients
For the crust:
- 1-1/2 cups nuts, (I used 1 cup of pecans and then a half cup of cashews)
- 1/2 cup almond flour
- 2 tbsp grass-fed butter or ghee, (or coconut oil for dairy free)
- 2 tbsp honey
- 1 tbsp molasses
- 1/2 tsp vanilla
- pinch of salt
For the pumpkin pie filling:
- 1/3 cup almond flour
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- pinch of salt
- 1 egg, – whisked
- 1/2 cup pumpkin puree
- 1/4 cup pure maple syrup
- 1/4 cup coconut or nut milk, (I used cashew milk because that’s what I had made recently and had in the fridge)
- 2 tbsp grass-fed butter or ghee, – melted
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1 tsp apple cider vinegar
Equipment

Baking Dish
Instructions
-
Preheat your oven to 350° Fahrenheit and line a baking dish with parchment paper. I used an 8×8 inch glass dish.
-
Place your nuts and almond flour in your food processor and pulse until the nuts are fine in texture, similar to the almond flour. You don’t want any chunks of nuts, but be cautious of over-pulsing as you will start to turn the nuts into nut butter.
-
Next, place the processed nuts in a mixing bowl and combine with the rest of the crust ingredients: butter/ghee, honey, molasses, vanilla, and a pinch of salt. Mix everything together until the ingredients are fully incorporated and the mixture resembles wet sand.
-
Pour the crust mixture into your parchment-lined baking dish. Use your hands or the back of a spoon to spread the crust out evenly and press it down firmly to create a compact, even layer. Set the crust aside while you prepare your pumpkin pie filling.
-
In a small mixing bowl, combine the almond flour, pumpkin pie spice, cinnamon, and a pinch of salt (all dry ingredients except baking soda). Whisk them together thoroughly to ensure the spices are well distributed.
-
In a separate, larger mixing bowl, whisk the egg until light and frothy. Then, add the rest of the wet ingredients for the filling: pumpkin puree, pure maple syrup, coconut or nut milk, melted grass-fed butter or ghee, and vanilla (save the apple cider vinegar for the very last step). Continue whisking until all the wet ingredients are smooth and well combined.
-
Slowly add the bowl of dry ingredients (flour and spice mixture) into the wet ingredients, whisking continuously as you add them. Mix until the flour and spice mixture is evenly incorporated and no dry streaks remain.
-
Finally, add the baking soda and apple cider vinegar to the filling mixture. It will begin to fizz slightly. Stir it into the batter immediately until just combined.
-
Carefully pour the pumpkin pie filling evenly over the prepared crust in the baking dish. Gently spread it if needed to cover the crust completely.
-
Place your pumpkin pie bars in the preheated oven and bake at 350 degrees Fahrenheit for approximately 45 minutes, or until a toothpick inserted into the center comes out clean. The filling should be set but still slightly soft.
-
Once baked, remove the pumpkin pie bars from the oven and let them cool completely on a wire rack. As they cool, they will firm up considerably. For best results and easier cutting, transfer them to the refrigerator once mostly cooled and allow them to chill for at least an hour (or longer) until fully firm.
-
When ready to serve, gently lift the parchment paper from the baking pan and place your beautiful pumpkin pie bars onto a cutting board.
-
Using a sharp knife, cut the pan-sized treat into 16 even squares and serve them up! These delightful bars can be stored in an airtight container in the refrigerator for about a week, or they can be frozen for up to a month for longer enjoyment.
