- 1/4 cup chicken broth, (refer to notes for consistency tips)
- 2 tbsp arrowroot starch, (refer to notes for alternatives)
- 1.5 cups full-fat coconut milk
- 1/2 cup sun-dried tomatoes, (chopped)
- 1/4 cup fresh basil, (chopped)
- 3 cups fresh spinach
- Chopped parsley, (optional topping for garnish)

Dice your shallot and mince the garlic. In a small bowl, combine the Italian seasoning, sea salt, and pepper, mixing well. This will be your chicken seasoning.
