Ingredients

For the sauce:

  • 1 orange, juiced
  • 1/4 cup coconut aminos
  • 2 tbsp tomato paste
  • 1 tsp tapioca flour (or arrowroot starch)
  • 2 tsp paleo sriracha or hot sauce (or Primal Kitchen Spicy Ketchup)

For the rest of the stir fry:

  • 2 lbs chicken breast, cut into bite sized pieces
  • 2 bell peppers, chopped (any color)
  • 1 onion, chopped into wedges
  • 2 cups pineapple, chopped
  • 2 tbsp avocado oil
  • Sea salt and pepper, to taste

Instructions

  • Whisk all of the sauce ingredients together in a small bowl or jar. Set aside.
  • Cut chicken into bite sized pieces. Heat a large skillet or wok over medium-high heat and add oil.
  • Once hot, add chicken to pan, season with generous pinches of salt and pepper. Cook, stirring occasionally, until chicken is cooked through, about 7-9 minutes. Remove from pan and set aside on a plate.
  • While chicken is cooking, chop bell peppers, onion, and pineapple as noted.
  • When chicken is done, add more oil to the pan if needed. Add veggies and pineapple to the pan and cook until softened, about 5-6 minutes.
  • Add the whisked sauce and cooked chicken back into the skillet. Continue to cook, stirring often, until the sauce thickens, about 2-3 minutes.
  • Serve over cauliflower rice (for Whole30), white rice, in a lettuce wrap, or over a bed of fresh greens. Enjoy!
