- 4 lbs (1.81 kg) chicken thighs, (or sub breasts, the cooking time will be the same)
For the BBQ sauce:
- 1 cup (240 g) beef broth
- 1/2 cup (131 g) tomato paste
- 1/4 cup (63.75 g) balsamic vinegar
- 1 tbsp (1 tbsp) chili powder
- 2 tbsp (2 tbsp) mustard
- 2 tsp (2 tsp) garlic powder
- 2 tsp (2 tsp) onion powder
- 2 tsp (2 tsp) cumin
- 1 tsp (1 tsp) chipotle powder, (spicy, adjust to taste)

To make the BBQ sauce, place all of the sauce ingredients in a mixing bowl and whisk well to incorporate. Place 1/2 of the sauce in a container and refrigerate, you’ll use it after the chicken is cooked.

Pour the other half of the sauce into the Instant Pot. Add the chicken thighs in on top of the sauce.

Press the “manual” button (or “pressure cook” button) and set the time to cook for 20 minutes at high pressure. Once the time is up, let the pressure naturally release for 15 minutes and then release any remaining pressure. Remove the lid and shred the chicken in the Instant Pot with two forks, mixing it with the juices.
