  • 1-1/2 cups nuts, (I used 1 cup of almonds and 1/2 cup walnuts)
  • 1/4 cup shredded unsweetened coconut
  • 10 dates, – pitted
  • 1/4 tsp salt

For the cashew cream:

  • 3 cups raw cashews
  • 1 lemon, – zest and juice
  • 1/4 cup pure maple syrup
  • 2 tbsp coconut oil
  • 1 tsp vanilla

For the berry topping:

  • 3 cups of fresh berries, (I used 2 cups of blueberries and 1 cup raspberries)

  • Important Prep Note: The cashews need to be soaked overnight (at least 8-12 hours) before you can make the cashew cream.

For the crust:

  • Line a 7×11” pan with parchment paper, and preheat oven to 350 degrees F (175 degrees C).
  • Place the nuts (almonds and walnuts) and shredded unsweetened coconut in your food processor. Pulse until the mixture is finely chopped and has a roughly meal-like texture.
  • Add the pitted dates and salt to your food processor. Continue pulsing until the mixture is well combined and sticky, forming a coarse dough.
  • Remove the mixture from your food processor and press it firmly and evenly into the parchment-lined pan.
  • Bake for 15 minutes, or until the edges appear lightly golden brown.
  • Remove from oven and set aside to cool completely while you prepare the next layers.

For the cashew cream:

  • Ensure the cashews have been soaked overnight (or for at least 8-12 hours). Drain them thoroughly.
  • Place the drained cashews, lemon zest, lemon juice, pure maple syrup, melted coconut oil, and vanilla extract into your food processor. Pulse until the mixture is incredibly smooth and creamy. This may take several minutes.
  • You will need to stop periodically and scrape down the sides of the food processor bowl to ensure all ingredients are well-blended and no chunks remain.
