  • 2 lbs ground pork
  • 1 tbsp sesame oil, (also used below)
  • 2 tbsp coconut aminos, (also used below)
  • 3 green onions, finely diced

For the Sauce:

  • 1/2 cup coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp white vinegar
  • 1 tsp ground ginger
  • 2 tsp garlic, finely diced, (about 1-2 cloves)
  • 1/2 tsp red pepper flakes, (optional, adjust to taste)
  • 1/2 tsp tapioca starch, (or arrowroot flour)

For Topping:

  • Sesame seeds
  • Diced green onion

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze.
  2. In a large mixing bowl, combine the ground pork, sesame oil, coconut aminos, and finely diced green onion. Use your hands to thoroughly mix the ingredients until just combined. Be careful not to overmix, as this can lead to tough meatballs. Form the mixture into golf ball-sized balls (about 1.5 inches in diameter). A small ice cream scoop can help ensure uniform size, which promotes even cooking. You should yield approximately 18-20 meatballs.
  3. Place the formed meatballs on the parchment-lined baking sheet, ensuring there’s a little space between each. Transfer the baking sheet to the preheated oven and bake for 20 minutes, or until the meatballs are cooked through and slightly browned.
  4. While the meatballs are baking, prepare your sticky sauce. Add all of the sauce ingredients (coconut aminos, sesame oil, white vinegar, ground ginger, minced garlic, red pepper flakes, and tapioca starch) to a small saucepan. Whisk vigorously until the tapioca starch is fully dissolved and all ingredients are well combined.
  5. Once the meatballs have about 7 minutes of cooking time remaining, begin to heat the sauce.
  6. Before turning on the heat, give the sauce another good whisk. Then, place the saucepan over medium-low heat. Bring the sauce to a quick, gentle boil, then immediately reduce the heat to low and let it simmer. Stir the sauce frequently, allowing it to thicken gradually. This process typically takes about 4-5 minutes, resulting in a glossy, sticky consistency.
  7. Carefully remove the cooked meatballs from the oven. For serving, spoon the warm, thickened sauce generously over the meatballs. Garnish with desired toppings such as a sprinkle of sesame seeds and a dash of freshly diced scallions for added flavor and visual appeal. Serve immediately and enjoy!
