  • 2 sweet potatoes
  • 1 lb grass-fed ground beef
  • 1 leek, chopped
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp garlic powder (or 2-3 cloves minced fresh garlic)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Large handful of fresh spinach

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Carefully poke several holes in both sides of each sweet potato using a fork. Alternatively, for a more “baked potato” effect, you can cut thin slices across the top of each potato (don’t cut all the way through).
  3. Place the prepared sweet potatoes directly on an oven rack or on a baking sheet. Bake for 45 minutes to 1 hour, or until they are completely cooked through and feel soft when gently squeezed. Cooking time will vary depending on the size of your sweet potatoes.
  4. Approximately 15 minutes before the sweet potatoes are done baking, heat a large skillet over medium heat on your stovetop.
  5. Add the ground beef, chopped leek, cayenne pepper, paprika, garlic powder, salt, and black pepper to the hot skillet. Cook the beef, breaking it up with a spoon, until it is thoroughly browned and cooked through. Drain any excess grease if necessary.
  6. Once cooked, carefully remove the sweet potatoes from the oven and let them cool for a few minutes. This makes them easier to handle.
