Choosing the Perfect Apples for Your Apple Cake

The foundation of any great apple cake lies in the quality and type of apples you select. While the Honeycrisp apple holds a special place in many hearts for its unparalleled crispness and sweet-tart flavor when eaten fresh, baking presents a different set of requirements. For this delightful gluten-free apple cake, our top recommendation is the humble yet mighty Granny Smith. Its firm texture holds up beautifully under heat, preventing the cake from becoming watery or mushy, while its distinctly tart flavor perfectly balances the sweetness of the cake batter and the rich caramel topping.

However, if Granny Smiths aren’t readily available or you prefer a slightly different flavor profile, don’t hesitate to experiment with other varieties known for their baking prowess. Excellent alternatives include Fuji, with its crisp texture and sweet-tart taste; Braeburn, offering a good balance of sweet and tart with a firm flesh; and Gala, which is milder and sweeter, softening nicely when baked. The key, regardless of your choice, is to slice your apples thinly. This ensures even cooking and allows the apple slices to meld seamlessly into the cake’s tender crumb. And here’s a pro tip: leave the skin on! Not only does it add a rustic charm and beautiful color, but it also contributes extra fiber and nutrients to your delicious dessert.

Unlocking Deliciousness with Gluten-Free and Grain-Free Flours

Creating a truly exceptional gluten-free and grain-free apple cake requires the right blend of flours, and for years, we’ve relied on the superb quality of Bob’s Red Mill products. In this specific recipe, we harness the power of their Super-Fine Almond Flour and a touch of Tapioca Flour to achieve a perfectly moist, tender, and robust cake structure. Bob’s Red Mill Super-Fine Almond Flour, made from blanched whole almonds, provides a light, airy texture and a rich, subtle flavor that complements the apples beautifully. Its fine grind is crucial for a smooth cake batter that doesn’t feel gritty or dense, a common challenge in gluten-free baking.

Tapioca flour, a starch derived from the cassava root, plays a vital role in binding the ingredients, adding a desirable chewiness, and improving the overall texture of gluten-free baked goods. It acts as a fantastic thickener and helps create that wonderful elasticity often missing when wheat flour is removed. Together, these two flours from Bob’s Red Mill create a harmonious blend that ensures your apple cake is not only safe for those with dietary restrictions but also incredibly delicious and satisfying for everyone. We appreciate Bob’s Red Mill’s commitment to high-quality, minimally processed ingredients, ensuring that what goes into your baking is pure and wholesome. Plus, as a company rooted in Oregon, we always love to support local partners who share our passion for real, simple, good food.

The Irresistible Allure of Salted Caramel Topping

Now, let’s talk about the salted caramel topping – is it truly a must-have? The short answer is yes, absolutely! While our gluten-free apple cake stands proudly on its own as a delightful treat, the addition of a luxurious salted caramel drizzle elevates the entire experience to an extraordinary level. Think of it this way: a plain apple is lovely, but a caramel apple? That’s a whole different ballgame. The rich, buttery sweetness of caramel, perfectly balanced by a hint of sea salt, creates a symphony of flavors that complements the tender, spiced apple cake with unparalleled perfection.

It introduces a layer of complexity and indulgence that transforms a simple dessert into a show-stopping masterpiece. The way the warm caramel slowly melts into the crumbly topping and tender cake creates pockets of gooey delight with every bite. If you’re hesitant, you can always drizzle it on individual slices, allowing you to compare a bite with and without. But trust us, once you experience the full, decadent embrace of salted caramel on this apple cake, you’ll join “Team Caramel” without a second thought. It’s the ultimate finishing touch that makes this cake an unforgettable fall and winter favorite. You can find our amazing homemade salted caramel sauce recipe here, which is also gluten-free, dairy-free, and refined sugar-free!

No Pie Dish? No Problem!

Don’t let the absence of a pie dish deter you from baking this incredible apple cake! While a traditional round pie dish gives it a classic look, this recipe is incredibly versatile and adaptable to various baking vessels. A square 8″x8″ baking pan is a perfect substitute. We typically use glass baking dishes for their even heat distribution, but the material and shape of your pan shouldn’t pose too much of a problem.

The key adjustment will be monitoring the baking time. Thicker cakes might take a little longer, while thinner ones could bake faster. Keep a close eye on your cake, and rely on the trusty toothpick test: insert a toothpick into the center, and if it comes out clean, your cake is done. The top should also be beautifully golden brown. If you opt for a square pan, you’ll naturally cut your delicious apple cake into neat squares or bars for serving, which can be equally charming and practical, especially for a crowd. So, gather your ingredients and get baking, no matter what shape your pan takes!

The Magic of a Crumbly Topping: A Texture You’ll Love

Beyond the luscious apples and the tender cake itself, one of the unsung heroes of this Gluten-Free Apple Cake is its exquisite crumbly topping. This delightful feature adds a crucial textural contrast that elevates each bite from merely pleasant to truly captivating. Imagine the tender, moist interior of the cake, studded with soft apple slices, meeting a slightly crisp, buttery, and sweet pecan-infused crumble. It’s a textural dance that creates an incredibly satisfying mouthfeel.

Our topping, made with chopped pecans, melted ghee (or coconut oil for a dairy-free option), coconut sugar, cinnamon, and a pinch of sea salt, is designed to bake into a golden, irresistible layer. The pecans add a subtle nuttiness and satisfying crunch, while the coconut sugar caramelizes slightly, enhancing the overall sweetness without overpowering the natural flavors. This crumble isn’t just an afterthought; it’s an integral part of the cake’s charm, providing a comforting warmth and an engaging texture that perfectly complements the soft cake and tart apples. It’s the perfect crown for this autumnal masterpiece, ensuring every forkful is a symphony of flavor and texture.

Baking Tips for Gluten-Free Apple Cake Success

Achieving a perfect gluten-free apple cake is simpler than you might think with a few key tips:

  • Measure Accurately: Especially in gluten-free baking, precise measurements of flours and leavening agents are crucial. Use a kitchen scale for the most accurate results, or level off your measuring cups carefully.
  • Don’t Overmix: Once you’ve added the wet ingredients to the dry, mix just until combined. Overmixing can develop gluten in traditional baking, but in gluten-free recipes, it can still lead to a dense or tough texture.
  • Grease Your Pan Well: Gluten-free cakes can sometimes stick. Ensure your baking dish is thoroughly greased and, if desired, lightly floured with a gluten-free flour blend to prevent sticking.
  • Preheat Your Oven: A properly preheated oven ensures even baking from the start. Give your oven ample time to reach the specified temperature before placing the cake inside.
  • Trust the Toothpick Test: As mentioned, this is your best indicator of doneness. Ovens can vary, so while the suggested baking time is a great guide, always verify with a toothpick.
  • Cool Completely: Resist the urge to slice into your warm cake immediately. Gluten-free cakes continue to set as they cool. Allowing it to cool completely ensures a firmer texture and prevents crumbling when sliced.

  • 1/2 tsp cardamom
  • 1/2 tsp paleo baking powder
  • 1/4 tsp sea salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup coconut butter, softened
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1 medium apple, thinly sliced, (leave the skin on)

For the topping:

  • 1/3 cup pecans, chopped, (or sub other nut of choice)
  • 2 tbsp ghee, melted, (or coconut oil for dairy-free)
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • Pinch of sea salt

Optional topping:

  • Salted caramel sauce, (to drizzle on top when you serve)

Instructions

  • Preheat oven to 350° Fahrenheit and grease a baking dish really well (use a 9×9″ glass pan or round pan about the same size). Chop apples and set aside.
  • In a large mixing bowl, whisk together the almond flour, tapioca flour, cinnamon, cardamom, salt, and paleo baking powder.
  • Mix in the melted coconut oil, softened coconut butter, maple syrup, and vanilla with a spoon until thoroughly combined with the dry ingredients.

  • In the same bowl you just used, combine all of the topping ingredients: chopped pecans, melted ghee (or coconut oil), coconut sugar, cinnamon, and a pinch of sea salt. Sprinkle this delicious crumbly mixture evenly over the top of the apple cake batter.
  • Transfer the baking dish to the preheated oven and bake for 50-55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
