Why This Skillet Recipe Deserves a Spot in Your Fall Rotation
- Effortless One-Pan Cooking: The ultimate convenience for busy schedules. All components cook together in a single skillet, simplifying both the cooking process and post-meal cleanup.
- Seasonal Flavor Harmony: This dish celebrates the best of fall produce. Bosc pears offer a firm texture and sweet-tartness, while Delicata squash provides a creamy, sweet, and nutty earthiness.
- Nutrient-Rich Ingredients: Packed with lean protein from chicken, healthy fats from bacon and avocado oil, and an abundance of vitamins and fiber from pears and squash. It’s a meal that truly nourishes.
- Perfect Balance of Sweet and Savory: The subtle sweetness of the fruits and vegetables perfectly complements the savory chicken and smoky bacon, creating a complex and satisfying taste.
- Aromatic and Warming: Fresh rosemary adds a wonderful herbaceous aroma, while a hint of cayenne pepper introduces a gentle warmth, making it ideal for cooler weather.

Tips for Perfecting Your Pear and Squash Chicken Skillet
- Choose Ripe But Firm Pears: Bosc pears are best when they are firm enough to hold their shape during cooking but still yield slightly to gentle pressure, indicating ripeness. Overly soft pears might become mushy.
- Evenly Cut Squash: Ensure your Delicata squash slices are uniform in thickness (about 1/4-inch) to ensure they cook evenly and become tender at the same rate as the pears.
- Don’t Overcrowd the Pan: While it’s a “one-pan” meal, avoid completely stuffing the skillet during the initial browning steps. Cook bacon and chicken in batches if necessary to ensure proper searing and crispiness. The vegetables will naturally reduce in volume as they cook in the oven.
- Adjust Spice to Taste: The recipe calls for 1/4 tsp cayenne pepper for a mild kick. If you prefer more heat, feel free to increase it to 1/2 tsp or more, or omit it entirely if you’re sensitive to spice.
- Consider Chicken Thighs: While chicken breasts are specified, boneless, skinless chicken thighs can also be used for an even more tender and forgiving result. Adjust cooking time slightly if using thighs, as they might take a few minutes longer.
- Garnish for Freshness: A sprinkle of fresh parsley or an extra sprig of rosemary after baking can add a beautiful pop of color and freshness just before serving.

Ingredients
- 10 pieces bacon, diced
- 1 large delicata squash, seeded and sliced into 1/4-inch rings or half-moons
- 2 bosc pears, cored and sliced into small wedges, (or sub other crispy pears like Anjou or Bartlett)
- 1 tbsp avocado oil
- 2 tbsp fresh rosemary, finely chopped
- 1/4 tsp cayenne pepper
- 1/2 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 4 boneless, skinless chicken breasts (about 6-8 oz each)
- Additional salt and pepper for seasoning chicken
Instructions
-
Start by heating a large cast iron pan or other oven-safe skillet over medium heat. While the pan is heating, dice your bacon into small pieces.
-
Once the pan is hot, add the diced bacon and cook for 6-7 minutes, stirring occasionally, until it just begins to crisp around the edges. It will finish cooking in the oven. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain.
-
Preheat your oven to 400° Fahrenheit (200° Celsius).
-
While the bacon is cooking, prepare your produce. Core the Bosc pears and slice them into small, even wedges. Cut the Delicata squash in half lengthwise, scoop out the seeds and stringy bits, then cut crosswise into 1/4-inch slices or half-moons. Place both the pear wedges and squash slices into a large mixing bowl.
-
To the bowl with the pears and squash, add the avocado oil, chopped fresh rosemary, cayenne pepper, 1/2 tsp salt, and 1/2 tsp black pepper. Toss everything together thoroughly until the pears and squash are evenly coated with the seasonings.
-
Season the boneless, skinless chicken breasts generously on both sides with additional salt and pepper.
-
After removing the bacon from the pan, pour off any excess bacon grease, leaving about 1-2 tablespoons in the skillet to cook the chicken in. This will impart wonderful flavor.
-
Increase the heat slightly to medium-high. Place the seasoned chicken breasts in the hot skillet and brown for approximately five minutes per side, until golden. The chicken will not be cooked through at this point. Remove the skillet from the heat.
-
Carefully arrange the squash and pear mixture around and over the browned chicken in the skillet. It will be quite full, but the vegetables will soften as they cook. Sprinkle the partially cooked bacon pieces evenly over the top of the entire dish.
-
Carefully transfer the hot skillet to the preheated oven.
-
Bake for 25-30 minutes, or until the chicken is cooked completely through (internal temperature of 165°F or 74°C) and the squash and pears are tender and slightly caramelized. Cooking time may vary slightly depending on the thickness of your chicken breasts. Serve immediately and enjoy the delightful flavors of fall!
