Ingredients

  • 4 lb organic bone-in pork shoulder
  • 1 tbsp sea salt
  • 1 tbsp ground pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika
  • 2 cups chicken stock, (or bone broth)

For the BBQ sauce:

  • 1/4 cup tomato paste
  • 4-6 dates, soaked for 10-15 minutes in warm water to soften then drained
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1/2 cup coconut aminos, (see recipe notes)

Instructions

  1. In a small bowl, combine all the seasonings (sea salt, ground pepper, garlic powder, onion powder, chili powder, and smoked paprika) and mix thoroughly to create the spice rub.
  2. If your pork roast is too large to fit comfortably in your Instant Pot, cut it into two more manageable pieces. Generously massage the prepared spice rub all over the pork. You might have a small amount of rub leftover if your cut of meat is on the smaller side.
  3. Carefully place the seasoned pork into the Instant Pot, ensuring the fat side is facing up. Pour the chicken stock (or bone broth) into the pot around the pork.
  4. Secure the lid on the Instant Pot and ensure the vent is set to the sealing position. Cook on the manual (or Pressure Cook) setting for 90 minutes at high pressure.
  5. While the pork is cooking, prepare the BBQ sauce. Combine all sauce ingredients (tomato paste, softened and drained dates, garlic powder, chili powder, and coconut aminos) in a blender or food processor. Blend continuously until the mixture is completely smooth. Pause as needed to scrape down the sides of the blender/processor, then resume blending. Store the finished sauce in the refrigerator until the pork is ready.
  6. Once the Instant Pot cycle is complete, allow the pressure to release naturally for approximately 10-15 minutes. This natural release method helps ensure the pork remains incredibly tender and juicy. Do NOT perform a quick release.
  7. Carefully remove the cooked pork from the Instant Pot and transfer it to a large cutting board or shallow dish. Using two forks or tongs, shred the pork until it reaches your desired consistency. Pour the prepared BBQ sauce over the shredded pork and mix thoroughly to coat every strand. Serve immediately and savor!
