- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated on a microplane
- 1/4 cup fresh cilantro, chopped, (plus more for topping)
- 1/3 cup lime juice, (about 2 limes)
- 4 chicken breasts, (see notes for thighs)
- 2 tbsp avocado oil, (or coconut oil)
- 1.5 cups full-fat coconut milk, (see notes for brand recommendation)
- 1/4 cup chicken broth
- Salt and pepper, (to taste)
- Lime slices for topping, (optional)
Instructions

Begin by preparing your aromatic ingredients: dice the shallot, mince the garlic, grate the fresh ginger, and chop the cilantro as instructed. Juice the limes and set the juice aside for later.

To ensure even cooking, place the chicken breasts between two pieces of parchment paper. Using a meat mallet or a heavy pan, pound them down until they are uniform in thickness. Season both sides of the chicken generously with salt and pepper.

Heat a large skillet over medium heat, then add the avocado oil (or coconut oil). Allow the oil to become shimmering hot before proceeding.
