  • 2 tbsp water
  • 2 tsp hot sauce

  • Begin by prepping all your ingredients: rice the cauliflower, chop the kale, mince the garlic, halve the cherry tomatoes, and ensure your shrimp is peeled and deveined.
  • In a large skillet, heat 2 tablespoons of avocado oil over medium heat. Add the riced cauliflower, chopped kale, minced garlic, and halved cherry tomatoes. Stir everything together to combine, then allow it to cook for about 5-6 minutes, stirring occasionally, until the kale has wilted. Season with salt and pepper to taste. Once wilted, reduce the heat to low to keep the mixture warm while you prepare the shrimp.
