Ingredients

  • 2 leeks, diced , (white and light green parts only)
  • 4 cloves garlic, minced
  • 2 celeriac, medium sized, peeled and cut into small cubes
  • 2 tbsp avocado oil
  • 1 tsp fresh thyme, finely chopped , (plus more for topping)
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 4 cups vegetable broth, (or chicken broth)
  • 1 lemon, juice of

Optional toppings:

  • shredded cheese, (omit for Whole30 or strict Paleo)
  • cooked bacon bits

Instructions

For the Instant Pot:

  • Prepare the leeks, garlic, and celeriac as previously described. Press the “Sauté” button on your Instant Pot and add the avocado oil. Once the oil is hot, add the diced leek and minced garlic, cooking and stirring occasionally for 3-4 minutes until softened and fragrant.
  • Press the “Cancel/Keep Warm” button to turn off the sauté function. Add the cubed celeriac, fresh thyme, sea salt, and ground pepper to the pot. Stir everything thoroughly to combine, then pour in the vegetable or chicken broth.
  • Secure the lid on the Instant Pot and ensure the pressure release valve is set to the “Sealing” position. Select the “Manual” or “Pressure Cook” setting and cook on high pressure for 5 minutes.
  • Once the cooking cycle is complete, carefully perform a quick release of the pressure by turning the valve to “Venting.” When the float valve drops, remove the lid. Using an immersion blender, blend the contents of the Instant Pot until the soup reaches a smooth and creamy consistency. Alternatively, you can carefully transfer the soup to a stand blender (in batches if necessary) and blend until smooth.
  • Stir in the fresh lemon juice. Taste the soup and adjust seasoning with additional salt and pepper as needed to suit your preference. Ladle the warm soup into bowls and serve immediately, garnishing with extra chopped thyme and any of your desired optional toppings.

For the stove top:

  • Prepare the leeks, garlic, and celeriac as noted above. Heat a large stock pot or Dutch oven over medium heat and add the avocado oil. Once hot, add the diced leek and minced garlic, cooking and stirring occasionally for 3-4 minutes until softened and aromatic.
  • Add the cubed celeriac, fresh thyme, sea salt, and ground pepper to the pot. Stir well to combine all ingredients, then pour in the vegetable or chicken broth. Bring the mixture to a quick boil, then reduce the heat to medium-low. Cover the pot and let it simmer for 10-15 minutes, or until the celeriac cubes are tender enough to be easily pierced with a fork.
  • Once the celeriac cubes are soft, use an immersion blender to blend the soup directly in the pot until it reaches a smooth and creamy consistency. If you don’t have an immersion blender, carefully transfer the contents of the pot (in batches if necessary) to a stand blender and blend until completely smooth.
  • Stir in the fresh lemon juice. Taste the soup and adjust seasoning with additional salt and pepper as needed to enhance the flavors. Ladle the hot soup into serving bowls and top with chopped thyme and any other optional toppings you desire.
