Sourcing Paleo and Whole30 Compliant Sausage Links

Finding breakfast sausage that fits strict Paleo and Whole30 guidelines is crucial for this recipe. The key is to look for sausages with no added sugars, nitrates, nitrites, or artificial ingredients. Many conventional sausages contain fillers, soy, or hidden sugars, which are not compliant with these eating plans. For this specific recipe, we successfully used Jones Dairy Farms No Sugar Pork Sausage Links, which are renowned for their clean ingredients and excellent flavor profile. They offer a fantastic starting point for anyone seeking delicious, compliant options.

However, the beauty of this recipe lies in its adaptability. You are encouraged to use any brand of Paleo and Whole30 approved sausage links you prefer. When shopping, make it a habit to scrutinize ingredient labels carefully. Look for phrases like “sugar-free,” “no added nitrates/nitrites,” and a short, recognizable ingredient list. Many health-focused brands now offer excellent options in various flavors, from classic pork to chicken or turkey variations, allowing you to customize the bake to your taste. If links are unavailable, ground sausage that meets the criteria can also be used; simply break it up and distribute it evenly on the pan alongside the vegetables.

Mastering Crispy Hash Browns with Fresh Potatoes

Achieving truly crispy hash browns from scratch, using fresh potatoes, might seem like a culinary challenge, but with our simple trick, it becomes surprisingly easy. While pre-shredded, frozen, or freeze-dried hash browns offer a shortcut, we firmly believe in the superior taste and texture of real, unpackaged food. The effort is minimal, and the reward of homemade, golden-crisp hash browns is absolutely worth it. This method ensures your potatoes are perfectly crunchy on the outside and tender on the inside, elevating your breakfast bake from good to extraordinary.

The secret lies in understanding how to manage the potato’s starch and moisture content. Starchy potatoes, when simply shredded and cooked, tend to clump together and become gummy rather than crispy. Our technique focuses on thoroughly removing excess starch and moisture, paving the way for that irresistible crispiness. Embrace the process of working with fresh ingredients; it’s a fundamental step towards creating truly wholesome and delicious meals. Plus, you’ll have complete control over what goes into your dish, avoiding any unwanted additives often found in pre-packaged alternatives.

Essential Tips for Unbelievably Crispy Hash Browns

The quest for restaurant-quality crispy hash browns from fresh potatoes ends here. The main hurdles are excessive starch, which leads to a sticky, gummy texture, and too much moisture, which steams the potatoes instead of crisping them. By following these tried-and-true steps, you’ll achieve perfectly golden, crunchy hash browns every time, forming the ideal foundation for your sheet pan breakfast bake:

  1. Rinse Away the Starch: Immediately after shredding your potatoes (we recommend using russet potatoes for their starch content), submerge them in a large bowl of cold water. Stir them vigorously. You’ll notice the water quickly turns cloudy as the excess starch is released. Drain and repeat this rinsing process until the water runs mostly clear. This step is critical for preventing stickiness.
  2. Thoroughly Dry Your Potatoes: This is arguably the most important step for crispiness. After rinsing, transfer the shredded potatoes to a large, clean kitchen towel or a stack of paper towels. Gather the ends of the towel and twist it tightly over your sink, squeezing out as much liquid as humanly possible. Don’t be shy; the drier the potatoes, the crispier they will be. Open the towel, fluff the potatoes, and then wring them out one more time for good measure. Any residual moisture will steam the potatoes, hindering that desired crunch.
  3. Spread in a Thin, Even Layer: When arranging the potatoes on your sheet pan, resist the urge to pile them high. A thin, even layer allows for maximum contact with the hot pan and ample air circulation, promoting even browning and crisping. Overcrowding the pan will lead to steaming, so if necessary, use two sheet pans to ensure enough space.
  4. The Broiler Boost: For that ultimate, irresistibly golden-brown crisp on the top layer, introduce your hash browns to the broiler for the final few minutes of cooking. Keep a close eye on them, as the broiler works quickly, and you don’t want to burn them. This quick burst of intense heat creates a beautiful, crunchy crust that completes the hash brown experience.

Ingredients

  • 8 cups shredded potatoes, (about 3 russet potatoes, use either a box grater or the food processor with the grating attachment to shred)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 tbsp ghee, (or coconut oil for dairy free)
  • 1 package Jones Dairy Farm Raw No Sugar Pork Sausage Links, thawed
  • 6-8 eggs
  • Sliced avocado, (optional topping)

For the seasoning:

  • 2 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp sea salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 400° Fahrenheit. Begin by prepping your onion and bell pepper: dice them into small, uniform pieces to ensure even cooking. In a small bowl, combine all the seasoning ingredients (garlic powder, oregano, sea salt, and pepper) and mix thoroughly. Set this seasoning blend aside.
  • Shred the potatoes using a box grater or a food processor with a grating attachment. Immediately after shredding, place the potatoes into a large bowl filled with cold water. Stir the potatoes well; you’ll observe the water becoming cloudy as the starch releases. Drain the potatoes in a colander and rinse them thoroughly under cold running water until the water runs clear. This step is vital for crispy hash browns.
  • Transfer the rinsed potatoes to the center of a large, clean kitchen towel. Gather the ends of the towel and twist it tightly over your sink, applying firm pressure to wring out as much liquid as possible. The goal is to get the potatoes as dry as you can. Open the towel, fluff the potatoes to loosen them, and then repeat the wringing process one more time to ensure maximum moisture removal.
  • Lightly grease two 11×17 inch sheet pans with 1 tablespoon of ghee (or coconut oil if you prefer a dairy-free option) each. Distribute half of the shredded potatoes, diced onion, and bell pepper evenly onto each sheet pan. Melt the remaining 2 tablespoons of ghee in the microwave or on the stovetop until liquid. Pour half of the melted ghee over the potato mixture on each sheet pan and toss to coat thoroughly. Sprinkle half of the prepared seasoning mix over each pan and toss again to ensure all ingredients are well seasoned and distributed.
  • Spread the hash brown mixture out into a thin, even layer across each sheet pan. Ensure there are no thick clumps, as this promotes crisping. Place both sheet pans into the preheated oven and cook for 20 minutes.
  • After the initial 20 minutes, carefully remove the sheet pans from the oven. Arrange the thawed sausage links evenly amongst the hash browns on each pan. Return the sheet pans to the oven and continue to cook for an additional 20 minutes, allowing the hash browns to crisp further and the sausages to cook through.
  • Once the second 20-minute interval is complete, remove the sheet pans from the oven again. Carefully crack 6-8 eggs directly onto the hash brown mixture, spacing them out amongst the sausage links. Season the eggs with a pinch of salt and pepper. Return the pans to the oven and bake for 5 minutes.
  • After 5 minutes, turn your oven’s setting to broil. Broil the breakfast bake for an additional 2-4 minutes, keeping a very close watch. The broiler works quickly to crisp the top of the hash browns and cook the eggs to your desired doneness (soft, medium, or hard yolks). Remove immediately once done.
  • Carefully remove the sheet pans from the oven. Using a spatula, scoop out generous servings of the crispy hash browns, perfectly cooked eggs, and savory sausage. Garnish each serving with fresh avocado slices if desired for an extra layer of creaminess and healthy fats. Serve immediately and enjoy your delicious, effortless breakfast!

Notes

If you possess one exceptionally large sheet pan, you might find it possible to fit all the ingredients onto a single pan. However, for optimal crisping and even cooking, we highly recommend and tested the recipe as written, utilizing two standard medium-sized (11×17 inch) sheet pans. This prevents overcrowding and ensures every component cooks perfectly.
