  • 1 lemon, juice and zest
  • 1 tsp sea salt
  • 1 tsp pepper
  • 2 tbsp avocado oil, divided
  • Salt and pepper to taste

For the sauce:

  • 1 avocado
  • 1/2 cup parsley
  • 1/4 cup olive oil
  • 1 tsp white vinegar
  • 1 lemon, juice of
  • 2 cloves garlic
  • Salt and pepper, to taste

Instructions

  • To prepare the sauce, place all sauce ingredients (avocado, parsley, olive oil, white vinegar, lemon juice, garlic, salt, and pepper) in a food processor or blender. Pulse until completely smooth. If you desire a thinner consistency, you can add a small amount of water, one tablespoon at a time, until it reaches your preference. Taste the sauce and adjust seasonings with additional salt and pepper as needed. Set aside.
  • For the salmon cakes, finely chop the shallot, garlic, and parsley. In a medium-sized bowl, combine the canned wild salmon (ensuring it’s well-drained if not Safe Catch brand), arrowroot flour, diced shallot, minced garlic, finely chopped parsley, lemon juice and zest, sea salt, and pepper.
