  • 2 tbsp pure maple syrup

  • 1/2 tsp chipotle powder
  • 4 sweet potatoes
  • 8 cups greens (spinach, kale, chard, etc.)

  • 1. Place all of the ingredients in your crockpot in the order listed above, reserving the sweet potatoes and greens for later. Cook on low for 6 hours or on high for 3 hours. Alternatively, you can use an Instant Pot and cook for 20 minutes.
  • 2. Preheat oven to 425°F (218°C). About 45-60 minutes before you plan to eat, begin baking the sweet potatoes. Prick each potato with a fork a few times. To catch any juices, line a baking sheet with foil and place it on the bottom rack of your oven. Place the sweet potatoes directly on the rack above the baking sheet. Cook for 45-60 minutes, or until the potatoes are tender when pierced.
