For the Soup:
- 1 butternut squash, peeled and cubed (about 3 pounds)
- 1 shallot, peeled and diced
- 4 cloves garlic, minced
- 1 tbsp coconut oil
- 2 tbsp red curry paste
- 1 tbsp tomato paste
- 1 tsp turmeric
- 4 cups chicken bone broth (sub veggie broth for Vegan)
- 1 cup coconut milk (plus more for topping)
- Salt and pepper, to taste
Optional toppings:
- Fresh cilantro, chopped
- Chopped pistachios or other nuts
- Fresh greens, chopped
- Roasted garlic
- Crispy bacon bits
- Kraut
Instructions
- Cut the ends off the butternut squash and slice it in half lengthwise. Scoop out the seeds, then peel the skin with a paring knife or vegetable peeler. Chop the peeled squash into uniform cubes.
- Prepare the shallot by peeling and dicing it, and mince the garlic cloves. If using an Instant Pot, select the “Sauté” function and add the coconut oil. Once melted, add the diced shallot and cook, stirring occasionally, for 3-4 minutes until softened.
- Add the minced garlic to the Instant Pot and cook for another minute until fragrant. Press the “Cancel/Keep Warm” button. Now, add the cubed butternut squash, red curry paste, tomato paste, turmeric, and chicken bone broth. Secure the lid on the Instant Pot and close the pressure release valve. Select the “Manual” or “Pressure Cook” function and cook on high pressure for 5 minutes.
- Once the cooking cycle is complete, carefully perform a quick release of the pressure. Using an immersion blender, blend the contents of the Instant Pot until smooth and creamy. Alternatively, carefully transfer the hot soup to a standard blender (working in batches if necessary) and blend until smooth.
- Stir in the coconut milk until fully incorporated. Taste the soup and season with salt and pepper as desired. Ladle the hot soup into bowls. For an extra touch, garnish with a drizzle of additional coconut milk, a sprinkle of chopped fresh cilantro, and a handful of chopped pistachios. Serve immediately and enjoy!
