Ingredients

For the Instant Pot or Crockpot:

  • 1.5 lbs boneless skinless chicken thighs, (or breasts)
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced, (about 2 tsp)
  • 1/2 cup chicken broth
  • 1/2 cup coconut milk
  • 1 batch taco seasoning, (see below)

For the taco seasoning:

  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground black pepper
  • 1/4 tsp sea salt
  • 1/4 tsp oregano

For the rest of the bowls:

  • 4 cups greens
  • 2 cups white or cauliflower rice, (prepared)
  • 1 avocado, pitted and sliced, (for garnish)
  • 4 green onion, diced, (for garnish)

Instructions

 

  • Begin by preparing your homemade taco seasoning. Combine all the listed seasoning ingredients in a small bowl or jar and mix them thoroughly until well blended. Next, chop your bell peppers, onion, and garlic as specified in the ingredient list.
  • Place the chicken thighs (or breasts, if preferred) at the bottom of your Instant Pot or Crockpot. Evenly distribute the chopped bell peppers, onions, and minced garlic over the chicken. Then, generously sprinkle your freshly mixed taco seasoning over all the ingredients in the pot.
  • Carefully pour the chicken broth and coconut milk around the ingredients in the Instant Pot. Secure the lid, set the Instant Pot to the manual (or pressure cook) setting, and cook for 20 minutes. Once cooking is complete, perform a quick release of the pressure. If you are using a Crockpot, cook on low for 8 hours or on high for 4 hours until the chicken is tender.
  • While the chicken is cooking in the Instant Pot or Crockpot, take this time to prepare your white rice or cauliflower rice according to your preferred method.
